Join Mona for two traditional Persian-style main courses that are delicious and easy to make. The first is Tahchin, a lovely dish of layered saffron rice and cooked chicken blended and held together with yoghurt and eggs. The bottom portion of the rice is “roasted” in the pan as it cooks, creating a golden brown layer, which becomes the top of the dish as it is plated upside down. The second dish is a flavorful Carrot and Chicken Stew served with rice.
